Ok, there are a TON of sushi restaurants in Vegas and we will literally go broke if we hit all of them that are within 15-minutes of Red Rock. So, we are limiting it to places from Charleston to Spring Mountain. There are probably some Japanese restaurants that specialize in fusion, ramen, shabu shabu, etc. that may also serve sushi, but it they don't emphasize sushi as part of their menu (or have a very limited menu to a couple of rolls), and these have been excluded from this sushi list (we may add these types of Japanese restaurants later in a separate section.)
Here are the criteria we are using for the rating:

- Nigiri is our metric for rating a sushi restaurant because it contains the basics - fish and rice - and you cannot hide behind sauces and other ingredients. If a restaurant has good nigiri they will likely have good rolls.
- Sushi fish- salmon, yellow tail, snapper, squid
- Flavor (not fishy or rotting)
- Size (decent size slices, not super thin)
- Sushi rice - the rice needs to have a good level of stickiness (not too sticky, not too crumbly) and flavor (not too plain, not too vinegary, not too salty)
- Price/performance ratio
Our star ratings:
- Below 3 stars we are labeling as "Duds" and they are not recommended.
- 3 = Straight down the middle - decent enough but not really memorable (but we may try it again to give it another chance)
- 4 = Well, well aren't we happy campers?! - we'd recommend it and would definitely go there again ourselves
- 5 = Heck yeah! - among the best we have ever had anywhere

This used to be called Oh-My Sushi. They do not have an AYCE menu and their prices have gone up ranging from $7-9 per nigiri, so it can add up. The quality used to be better than it is recently (Nov 2023), so we have down graded thier score. Their rice had a decent balance of sweet and vinegar, our only minor critique of the rice was it a hair on the dry side. They have recently added black rice to their menu, which is a nice touch and not salty. |

We have been to Hanabi numerous times. It used to be our AYCE go-to sushi place post-climbing, the COVID days took its toll here, and in 2023 they have recovered - with the fish quality back up to par. The sushi is good - meaning we rarely hit literal stinkers (aka. I wish I didn't eat that, it tasted off) - but the fish slices are on the thinner side (except the fish only and rice rolls - eg. yellow tail or salmon roll - have more fish.) Yes, you can order 20 million pieces of nigiri to make up for the tiny sizes... They do have a decent selection of roll and nigiri options - like uni, different roe, surf clam, etc. Some of those have a limit of one in the AYCE. Their sushi rice is pretty balanced flavor-wise (i.e. not overpowered with vinegar or salt). This is a regular, convenient visit for us. The AYCE is a good deal. |

We liked this place - we think it's the home-made smokey soy sauce. The prices range from $3.75-6 for nigiri. The rice on it's own was on the salty side, but when paired with the fish, it tasted just fine. The salmon was a good texture and had some flavor. They did not have squid on the menu or red snapper, so we tried the Madai - japanese snapper. All of the fish was decent. They do put some wasabi on the nigiri as well as a sprinkle of their soy sauce. We don't usually like it when "sauces" are added to basic nigiri, because the impression is they are trying to hide something ("saucy" orders should be separate/different). With that said, we didn't find the amount of soy sauce they added to be overpowering, and, as mentioned above, the homemade soy sauce is really lovely - so we forgive them. We'd come back here. The only real potential appeal to this place is the belt that you can grab your sushi and chow down instantaneously. You might be be mildly entertained by chucking your used plates down a slot, which keeps a plate count for you - it's kind of like a video game. If you eat enough, it spits out a plastic ball with tiny toys in it - free sushi would nice though. At $2.75 per plate, they do not differentiate between salmon and cucumbers or egg. The quality of the fish was meh to marginal. The salmon was flavorless, and for that matter so was all of the other fish. My squid was slimy and had an off-fishy flavor. We felt like they the low quality of their fish by adding sauces - which are actually pretty tasty and help a lot, but if you are looking for a high quality and affordable sushi experience, this is not worth it. Also, the cuts of the fish were small and the rice was almost too vinegary. This is not someplace we will ever return to. |

We walked up to this place, glanced at the posted menu and turned right around after we recovered from seeing the prices. It was waaayyyy to pricey for us right now. Someday we'd be curious to try it but we can't bring ourselves to pay the $11-20 per nigiri. |

This place is expensive ($6-11 per nigiri) and pretty bad. It's honestly some of the worst rice we have ever had - waaayy too much sugar, it over powers the fish. The squid was sliced thin and was slightly slimy and had a strange metallic tast. The salmon had good texture but zero flavor. The yellowtail had strange tangy/metallic overtones (like it was on the verge of going bad? Or caught in a toxic waste dump? They did not have red snapper, so we ordered the more expensive Madai, or Japanese snapper. It was slightly fishy, had no flavor, and mine did not have the membrane fully removed so it was like a choking string in my mouth. Honestly, we almost walked out after our first bite and the last time I considered doing that in a sushi restaurant was more than 15 years ago. |
